Bite-Sized Twinkies Baked Alaska

We have had large family get-togethers at our lake cottage for years and fried Twinkies are a menu favorite. This recipe takes the Twinkies up a notch and could provide a new tradition for years to come.

Ingredients

  • 2 Twinkies® Snack Cakes
  • 1 cup ice cream (select your favorite flavor)
  • 2 egg whites, at room temperature
  • 2 tablespoons sugar
  • One pinch cream of tarter

Directions

Line a baking sheet with parchment paper.

Cut a thin slice off the round ends of each Twinkies snack cake. Cut each Twinkies snack cake into 4 even slices. Place slices several inches apart on the prepared baking sheet. Scoop about 2 tablespoons of ice cream on top of each slice and mound to resemble a round scoop. (Using a cookie scoop makes this step easy). Cover with plastic wrap and freeze several hours or overnight.

When ready to serve, preheat the oven to 500°F. In a bowl, using an electric mixer at high speed, beat egg whites until frothy. Continue beating and gradually add sugar and cream of tartar. Beat until stiff peaks form.

Cover each Twinkies snack cake bite with the meringue. Bake for 2 minutes, until the meringue browns. Serve immediately.
